Las Vegas: Chef Jeremy Ford is finally bringing Stubborn Seed to Vegas. This is exciting news for food lovers! His Michelin-starred restaurant from Miami Beach will open on February 10 at Resorts World.

People have been buzzing about this since November 2023 when the news first broke. Ford wants to offer guests a taste of global flavors, all crafted with care by his talented kitchen and service teams.

The restaurant will feature seasonal tasting menus with eight courses for $135 and ten for $175. There will also be an à la carte menu available in the bar-lounge and on the terrace starting in spring. Plus, you can enjoy some creative cocktails like the Fennel Fields Forever.

Some of the dishes on the tasting menu sound incredible! Think Kaluga caviar macaroons, Hudson Valley foie gras tarts, and pan-roasted barramundi. Each dish is designed to take you on a culinary adventure.

Ford and his team are also giving a nod to Miami with the restaurant’s design. Expect an art deco vibe, lots of greenery, and a stunning glass-fronted kitchen. The dining room will have a hand-painted mural and cozy red leather banquettes.

Stubborn Seed first opened in Miami Beach in 2017, and now it’s making its mark in Vegas. You can find it in The District at Resorts World. For more details, check out stubbornseed.com/las-vegas and follow them on Instagram @stubborn_seed.
