Bamboo Sushi has opened its second Denver location, bringing fresh sushi and a commitment to sustainability to Congress Park.
Denver: Bamboo Sushi has just opened its second spot in the city, this time in Congress Park. Since its first location in LoHi back in 2016, it’s been a hit with locals for its fresh sushi and unique rolls.
The new restaurant is at 1160 Madison St., right in a neighborhood filled with families. Elijah Lehrer, the vice president of operations, mentioned how they want to be part of the community, not just another restaurant.
They took over the space from Sushi Ronin, which just closed last month. The new place is cozy, with 50 seats and a sleek sushi counter. There’s also a small patio for outdoor dining, plus a bar serving cocktails, sake, and more.
Lehrer noted that this location feels more intimate than the larger LoHi spot. He’s excited about getting to know the regulars and providing top-notch hospitality.
Bamboo Sushi started in Portland in 2008 and prides itself on being the first certified sustainable sushi restaurant. They focus on sustainability in every aspect, from sourcing fish to supporting local communities.
Lehrer explained that sustainability is a moving target, especially when it comes to the communities that rely on fishing. They even have dishes like sockeye salmon on the menu, which supports those communities.
One standout dish is the Green Machine, featuring tempura fried green beans and chili aioli. Plus, they donate 1% of sales to environmental nonprofits. Their sashimi and nigiri are also popular, crafted to be enjoyed without soy sauce.
While Lehrer didn’t confirm any future locations in Colorado, he hinted that they’re always looking to expand. He’s thrilled about the new restaurant and can’t wait to see how the community responds.
